Parker Dutro's picture

1 leek

1 carrot

1 parsnip

1 rutabaga

1 butternut squash

Peel, wash and/or remove seeds from all.  Cut into chunks, throw into a big bowl and pour 1/4 cup olive oil over and toss until coated.  Oil or line baking sheet(s) with foil and spread in single layer.  Add salt and pepper to taste.  Spread 5-6 sprigs each of fresh rosemary and thyme throughout, or alternately use dried herbs to taste.  (Be careful with dried herbs, use sparingly first time) Should have something like the picture.

Here is another post inspired by Alwyn Cosgrove to re-ignite my momentum. Alwyn is always a source of solid logic and strategic planning for personal success! ! !
